One is very special and has a glass fitted insert atop the tray matching the pattern of the tray itself. Some trays have feet, not shown in pics, that make them stand an inch higher to keep from scraping a tabletop and keep the dish contents warmer. The sunken pattern allows the juices from cooking/barbecuing to roll away from the meat itself, so it does not sit in the juices. No one uses such anymore but you can be the standout that will draw attention from dinner guests. There are other ideas you could use them for such as artwork frames or holding plants. Be creative.
